School lunch, day 18

Aka “Wait, doesn’t this look familiar?”

KG had a tragic lunch incident Friday… Her lunch fell on the floor. The lunch ladies saved her with a PB&J, but she asked to have the same sandwiches so she could actually eat them.

Ham, cream cheese and grated celery “sandwich sushi,” carrots and grapes, yogurt with apple butter, chocolate for lunch.

Pretzels and raisins for snack.

Update: what came home.

She said, “Mommy. There was celery in those sandwiches. I don’t like celery.” Ah well.

“Magic wand” French toast

KG and I went to her school’s book fair last night. She was very into every book that was pink, or about princesses. I parleyed that interest into getting a new cookbook for us to use together:

It is pretty much real food and real cooking, despite the princesses. This morning, KG looked through the cookbook and picked out “Magic wand” French toast from the Cinderella section. Amazingly, we had all the ingredients on hand! The French toast is served with a tea cup of orange/cinnamon/honey dipping sauce, which we all enjoyed… and none of my fancy cups broke, which is pretty miraculous. This was a definite win… W was so upset that we ran out that he cried. Will make again!

Martha Stewart shrimp and spaghetti squash

I made Martha Stewart’s roasted shrimp and spaghetti squash last night. I thought it turned out great, very light and satisfying. The kids rejected it, despite having eaten (and enjoyed) shrimp before.

Tweaks I made to the recipe: I cooked the spaghetti squash in the slow cooker (7 hours on low with 2 cups of water) so it would be done when we got home; I roasted the shrimp with shells on; I used dried parsley instead of fresh (our parsley is pretty slim pickings right now); and I went without the lemon wedges. With those changes, dinner was on the table in less than 20 minutes – woo! If only the kids had eaten it, I would say this was a great midweek meal.

More sandwich sushi! They were a huge hit today, so I’m going for a bit more of a challenge tomorrow.

Ham, cream cheese and grated celery sandwiches; nectarines; carrots.

Water, sweet potato chips, fruit leather for snack.

School lunch, day 16

Skipped today because school was closed for Yom Kippur. Trying a new thing! Sandwich sushi. Since they are new to KG, am going with peanut butter and apple butter for the first day. Also: banana (carefully halved to fit in box), carrots, yogurt, chocolate. Water, pretzels, raisins for snack.

School lunch, day 15

Another KG designed creation, aka homemade lunchables. Turkey pepperoni, cheddar cheese, ritz. Apples, carrots, chocolate. “Carrot cake” yogurt (plain yogurt with carrots, apple butter, raisins).

Update: what came home.
The yogurt – she said it looked.gross. Guess she likes mixing it herself.

Water, raisins, cinnamon graham crackers for snack. Also, after three weeks, she seems like she has figured out how to buy milk. Yay!

Mini kale frittatas

I found this recipe for Kale Frittata cups on Pinterest and, since I had all the ingredients on hand, I had to give it a try. I’m always up for a good, high-protein, portable breakfast.

These were great! A bit small, maybe, for breakfast by themselves, but I had a morning glory muffin with it and that was perfect.

School lunch, day 14

This is another KG special request. Since she didn’t finish her salad on Friday, she asked me to make her just a salad for tomorrow, so she will have time to eat it. Guess we will see what happens! Spinach, carrots, turkey pepperoni, provolone, tomatoes. With ritz crackers and Italian salad dressing, and a chocolate. Water, pretzels and cranberries for snack.

Update: what came home.
Pretty much everything except the crackers and the salad dressing. Ew. She said she ate some of the pepperoni and cheese.

Morning glory muffins

On Monday, I made a big batch of apple butter. We’ve been enjoying it for breakfast, lunch and snacks all week, but I wanted to try cooking with it as well.

In the reviews on the apple butter, this Morning Glory Muffin recipe was recommended. I had pretty much everything on hand, so I gave it a shot!

My tweaks were as follows:

– Oat flour (processed oats) instead of whole wheat
– 2 1/4 cups carrots instead of 2
– 1/2 cup sugar instead of 1 1/4
– almonds instead of walnuts
– flaxmeal instead of wheat germ
– 3/4 apple butter instead of 1/2
– omitted the oil and salt
– 2 eggs instead of 1 egg and 2 whites

These turned out great! W rejected them because of the carrots and almonds. Totally going to lie to him tomorrow and say they are oranges and sugar.

KG and I, however, loved them. Will make again.

School lunch, day 13

Aka “Ack! I forgot to make KG’s lunch last night!” Unlucky 13, I guess. Anyways, she told me this is what she wanted. Ham and cheese sandwich, spinach and carrots (salad dressing in little container), chocolate.

Water, applesauce, goldfish and raisin combo for snack.

Update: what came home.

Supposedly, she “ran out of time” to actually eat the spinach and carrots… After dumping the salad dressing on them, of course. She does eat pretty slowly.
