Morning glory muffins

On Monday, I made a big batch of apple butter. We’ve been enjoying it for breakfast, lunch and snacks all week, but I wanted to try cooking with it as well.

In the reviews on the apple butter, this Morning Glory Muffin recipe was recommended. I had pretty much everything on hand, so I gave it a shot!

My tweaks were as follows:

– Oat flour (processed oats) instead of whole wheat
– 2 1/4 cups carrots instead of 2
– 1/2 cup sugar instead of 1 1/4
– almonds instead of walnuts
– flaxmeal instead of wheat germ
– 3/4 apple butter instead of 1/2
– omitted the oil and salt
– 2 eggs instead of 1 egg and 2 whites

These turned out great! W rejected them because of the carrots and almonds. Totally going to lie to him tomorrow and say they are oranges and sugar.

KG and I, however, loved them. Will make again.
