No-sugar fruit and yogurt parfaits


W’s birthday was this past Friday, and I wanted to send a snack to his preschool to celebrate, but they have a strict no sugary snacks policy. So no cupcakes, no cookies.

Luckily, they do provide a list of suggestions. One was fruit and yogurt parfaits, and here is my version.

Bottom layer: plain, non-fat yogurt.
Middle layer: plain, unsweetened applesauce.
Top layer: vegan blueberry pie filling, which is banana, dates and blueberries.
Topper: one slice banana

We served them in empty single-serve applesauce containers… That was the trickiest part! It is hard to make and transport 26 little treats. We had to find something that would fit in my cupcake carrier, and the applesauce containers worked perfectly. I put some press-n-seal over the top of each tray for security.

Here’s hoping the preschoolers enjoy the treat! W liked seeing all 26 containers set up to go to school 🙂

School lunch, day 38: Happy Halloween!


Open-“face” Jack-o-lantern sandwich (shredded carrots mixed with cream cheese with raisins for features and a lettuce “stem/leaves”) in a “field” of shredded lettuce; “creepy” purple layered yogurt (blended mixed berries on top of plain yogurt); Halloween candy (from trick-or-treating at the mall) for lunch.

Banana & granola bar for snack.

Update: so, this lunch was an epic fail. What KG ate: tootsie roll. Evidently, the lettuce got on the sandwich and made them both inedible. *headdesk* She didn’t eat the snack b/c they had a Halloween party at school (which I can understand) but I was annoyed about spending 15 minutes making a special Halloween lunch that she didn’t touch. Argh.

School lunch, day 36


Ham and cream cheese sandwich; grapes; frozen mixed berry & spinach yogurt (in my new spiffy silicone “GoGurt” maker); chocolate for lunch.

Pear, goldfish and water for snack.

Updated: Yogurt was a huge hit, although she was sad that it didn’t stay frozen until lunch (darn those laws of thermodynamics). Sadly, it was such a huge hit that she only ate half her sandwich. Ah well.

Stay-home lunch

What did KG have for her happy new year lunch at home?
Carrot cake parfait (recipe from Parents magazine), leftover breakfast smoothie (orange juice, banana, spinach, yogurt).

(I made myself a parfait, too. Was delicious. I should also say that we used homemade plain yogurt instead of vanilla yogurt, then drizzled in a little vanilla extract.)
